Try this dessert with apples, peaches, bananas, pineapple or pears. This recipe is flexible in terms of “mix-ins.” Add the flavor you crave! Note: This recipe does call for an Instant Pot, or pressure cooker.

Prep time: 15 min. Cook time: 5 min. Servings: 4 (1 cup serving)

Ingredients

  • ¼ c. pastry flour or all-purpose flour
  • ½ c. granola
  • ½ c. brown sugar or agave syrup or cane sugar
  • 1 T. ground cinnamon
  • ¼ c. coconut oil, melted
  • 2 c. fresh fruit cut into chunks
  • 1 c. water
  • ½ t. salt

Directions

  1. In a medium size bowl, combine the flour, granola and sugar together with a fork or a pastry blender until small crumbs form.
  2. Spray the Instant Pot with non-stick cooking spray.
  3. Combine the melted coconut oil, brown sugar or agave or cane sugar, cinnamon and salt and stir together in a separate bowl. Then add fruit and toss to coat.
  4. Put the fruit mixture in the Instant Pot and pour in water.
  5. Add the “crumble” on top of the fruit base.
  6. Set to Pressure Cook or cook on Manual for 2 minutes.
  7. When timer beeps, let sit for an additional 2 minutes, then “quick release” by opening the vent.
  8. Optional: Spoon servings into oven-proof dish and broil for 1-2 minutes, to crisp the topping, if desired.
