When it comes to prepping light summer dinners, these lettuce cups with shrimp shine! Shrimp is a low-calorie food loaded with protein, vitamin D and zinc. Pair with brown rice or quinoa for a great gluten-free meal.

Prep and cook time: 45 min. Servings: 4 (2 lettuce cups)

Gluten Free
